I often saw a sign "KOSHER" at restaurants or supermarkets in New York.
これはユダヤ教で食べてもよいと定められている食品を扱っていますよ、というサインです。
This sign means that they sell foods defined by the dietary laws of Judaism.
その食品とは「4つ足の獣のうち蹄が分かれ、反芻をするもの （牛、ヤギ、羊など）」「海や川・湖に住む生き物で、ヒレと鱗のあるもの」などだそうです。
The foods are: it must have split hooves and chew its cud, (i.e. cow, goat, lamb, etc.), creatures living in oceans, lakes, and rivers, which have fins and scales, etc.
